We receive a lot of great questions about the BC Airtight Coffee Canister — how it works, how to test it, and whether it's really worth using over a standard bag. Here's everything you need to know.
Q1: I store my beans in the canister and keep the canister inside my cupboard, and every morning when I open the cupboard I can smell coffee. Is the canister airtight?
A: This is completely normal! 😊
The canister works by sealing the aroma inside and protecting your beans from air and moisture each time you close the lid. However, every time you open it to scoop your beans, fine coffee particles and aromatic oils settle on the rim and the outside of the canister. When you place it back into the cupboard, those traces come with it.
Cupboards are enclosed spaces — they trap and accumulate even the tiniest amount of aroma over time. After a few uses, the shelf itself absorbs the scent. This is why you can still smell coffee the next morning without ever having opened the canister inside the cupboard.
The canister is doing exactly what it should — sealing the aroma inside and protecting your beans from air and moisture. The smell in your cupboard is just coffee being coffee: incredibly aromatic, even in trace amounts. ✅
Q2: I put biscuits in the canister and after a couple of days they went stale. Does that mean the canister isn't working?
A: This one is a really common mix-up, and it's not your fault at all! 😊
Biscuits and crackers go stale in a different way to coffee. Their staleness is caused primarily by moisture absorption — they draw in humidity from the air already present inside the container at the moment you sealed it, as well as moisture released by the biscuits themselves over time. No canister (even a laboratory-grade vacuum container) can prevent this once that moisture is inside.
The BC Airtight Canister works by removing excess oxygen to slow oxidation — which is exactly what makes it ideal for coffee, tea, nuts, seeds, and dry pantry goods. For something as moisture-sensitive as biscuits, we'd recommend adding a small food-safe silica desiccant packet inside alongside them for best results.
For coffee beans and grounds, the canister performs exactly as designed. ✅
Q3: How do I test if the seal is working properly?
A: Here are a couple of easy ways to check at home:
1. The press and resist test — Open the teeterboard valve on top, then press the inner lid down firmly until you hear the satisfying "swoosh" — this is the air being pushed out. Flip the teeterboard to lock the lid closed. Now gently try to lift the inner lid with your fingers. If the seal is working correctly, it should offer noticeable resistance. This is because the air inside has been reduced, while the atmospheric pressure outside pushes down on the lid — that pressure difference is what holds it firmly in place. ✅
2. The water flip test — Fill the canister with water, place the inner lid on, then flip it upside down over a sink. If no water drips out, the seal is physically intact. ✅ It's worth knowing this test doesn't perfectly prove the seal is airtight for gases — not because water molecules are larger (oxygen and nitrogen molecules are actually larger than water molecules), but because liquid water has surface tension that prevents it from passing through tiny gaps, while gas molecules diffuse freely through microscopic openings. Even so, it's a reliable practical test: if water leaks, the seal is damaged. If it holds, the lid is properly seated and working.
Q4: I just keep my coffee in the original bag and find it the same as using the canister?
A: We really appreciate you testing this — and we want to be honest with you. If you're comparing over a short period (3–5 days), the difference may genuinely be hard to notice. Freshly roasted beans naturally degas CO₂, which displaces some of the oxygen inside the bag — this is why specialty coffee bags have one-way valves. So for the first few days after opening, a folded bag and a sealed canister can produce similar results.
Where the canister makes a real difference is over 1–2 weeks or longer. As beans age, the CO₂ diminishes, and the bag lets more oxygen in with every scoop. The canister actively removes excess oxygen each time you seal it — slowing that oxidation process significantly.
A fair test would be to store the same batch of beans in both — then compare the aroma and taste at the 2-week mark. Many customers who do this side-by-side notice the canister beans have a brighter, more complex aroma and less flatness in flavour.
If you finish a bag within a week, the canister's impact is smaller. But if your beans sit for 2–4 weeks, it's one of the easiest ways to protect your investment in quality coffee. ☕
Q5: What's the difference between "airtight" and "vacuum"? Is the BC canister a vacuum canister?
A: Great question — these two terms are often used interchangeably, but they do mean different things.
Airtight means the seal prevents outside air from entering or exiting once closed. Vacuum means the air inside has been actively removed, creating a low-pressure environment with very little oxygen remaining.
The BC Airtight Canister achieves airtightness. When you press the inner lid down, excess air is pushed out through the air holes in the plunger. Flipping the teeterboard valve on top then locks the lid, creating a complete seal — once sealed, nothing gets in or out.
That said, it cannot create a true vacuum. When coffee beans are inside, there are natural gaps between each bean where air and CO₂ from degassing remain trapped. The plunger removes the excess air above and around the beans, significantly reducing the oxygen level — but some air will always remain between the beans themselves. A more accurate description is airtight with significantly reduced oxygen.
One thing worth knowing: because the canister is completely sealed (unlike some canisters that have a passive one-way valve), freshly roasted beans that are still actively degassing CO₂ will gradually build pressure inside. This is completely normal. If you notice the lid becoming harder to open over time with very fresh beans, simply flip the teeterboard valve briefly to release the CO₂, then reseal.
For everyday home coffee storage, this is excellent protection — significantly better than any standard container or loosely folded bag. ✅
Q6: I closed the inner lid but didn't push it all the way down — I left it halfway. The next day I noticed the lid had slid down further. Does this mean the canister isn't airtight?
A: Not at all — this is actually completely normal, and it shows the canister is working as it should! 😊
When the inner lid is left halfway, no seal has been formed yet. Without a seal, there's no pressure holding the lid in place — so gravity gradually pulls it down over time. Think of it like a drawer left half-open: it will settle on its own.
The seal only activates when you press the inner lid all the way down until you hear the "swoosh" sound. At that point, the plunger has pushed excess air out through the valve. The valve then closes, trapping lower pressure inside the canister. That pressure difference is what locks the lid firmly in place — which is why a properly sealed lid resists when you try to lift it.
So a lid that slides freely when left halfway, but stays firmly in place once fully pressed — that's the seal working exactly as designed. ✅ Always press until you hear the "swoosh" to confirm the seal is set.
