Why Does Your Espresso

Most people blame their coffee beans, their machine, or their tamping pressure. But the real culprit is almost always what happens before you tamp.
When grounds fall into your portafilter, they pile up unevenly — one side higher, one side lower, with gaps and air pockets throughout. When hot water is forced through that uneven puck, it finds the weak spots and punches a hole straight through. This is called channeling — and it's the #1 cause of inconsistent espresso.
Water races through that channel — over-extracting the coffee around it (bitter) while the rest of the puck is barely touched (sour). Both in the same shot.
